Have you been to a ramen shop called “Afuri”? It has now become such a popular ramen shop among Japanese people as well as tourists. Its first ramen shop started on the foothill of Mt. Afuri in Kanagawa in 2001, but the shops are now located in central areas throughout the West side of Tokyo. A lot of people get addicted to its signature bowl of Yuzu Shio ramen; a light, delicate broth built upon a reduction made from local chicken, “niboshi” (dry fish), “katsuobushi” (dry konbu seaweed), and vegetables that produce a layer of umami flavors, and a hint of refreshing yuzu citrus. Also, if you are looking for any good souvenir to buy in Tokyo, I would recommend buying instant cup noodles from Afuri which can be purchased either online or at convenient stores. In my view, the Afuri cup noodles succeeded in replicating the taste of Yuzu Shio ramen, the signature ramen of Afuri, from the richness of the broth to the texture of the noodles. Don’t worry if you don’t have enough space in your luggage; there is a mini instant cup noodle that is almost your palm size (see below!).
